The cool and the crunch
Broccoli almost always arrives cooked. Cucumber almost never does.
Raw, broccoli keeps its crunch and is a good source of vitamin C and fibre. Cucumber is mostly water. Some people find a bowl of the two together feels light and cooling on a warm day.
What would a bowl of this do for one of your warm afternoons?
What you'll need
- 2 cups broccoli florets, cut into small bite-size pieces
- 1 cucumber, halved and sliced thin
- Juice of half a lemon
- 1 tbsp olive oil
- A small pinch of salt
- 1 tbsp pumpkin or sunflower seeds (optional)
Method
For a softer floret, dip the broccoli in boiling water for a minute, then cold water to keep it green and crisp. Raw is good too, so pick your way.
Toss the broccoli and cucumber together. Squeeze over the lemon, add the oil and salt, and scatter the seeds on top.
Make it this way now and then over a week of warm days, and notice how light or full you feel afterward, and whether you reach for it again.
